During my freshman year of college, I discovered a love newfound love for apple cinnamon oatmeal packets with a big scoop of peanut butter. The weekend before my first finals week, I locked myself in my dorm and ate endless bowls of peanut butter apple cinnamon oatmeal bowls while I studied. I love these waffles because they taste exactly like my college dorm go-to meal. Okay, they taste better than my college dorm room oatmeal, but they have a similar nostalgic smell and taste. The secret here is the little bit of cinnamon, toasty peanut butter, and a slight appley taste. I want a candle of the smell these waffles make while blending.

Where do I get Whole Wheat Flour? 

Most stores sell whole wheat flour. For the best prices, find a generic store brand of whole wheat flour. I like to pick up the Good and Gather whole wheat flour sold at Target. Whole wheat flour makes this recipe a bit denser than all-purpose flour waffles, but I love the heartier taste that the wheat flour brings to these waffles.

Peanut Butter

Creamy peanut butter seems to work the best. I have no problem with natural peanut butter, but for this recipe, I wouldn’t suggest it. 

Unsweet Vanilla Almond Milk

I use unsweet almond vanilla milk when I make these, but you can use the milk of your choice. If your milk doesn’t have vanilla in it, try adding 1 /2 tsp vanilla to the recipe.

Butter

Melted butter in waffles is my favorite, but really, any form of oil/fat will do. I would suggest melted refined coconut oil or any neutral oil as a replacement.

Applesauce

Any applesauce will work here. I would suggest unsweet applesauce to avoid additional sweeteners in your waffles. This recipe takes 2/3 cup of applesauce but you can also use 2 of those little 4oz. Snacks-size containers of applesauce.

Pure Maple Syrup

I use pure maple syrup as a “healthier” alternative sweetener. Make sure that you are using the pure stuff, but if you don’t have any on hand honey or agave nectar will substitute well.

Cinnamon

You can add cinnamon in if you like (I love the cozy warmth of cinnamon), but you can omit it if you are not into the peanut butter cinnamon combo.

Whole Wheat Flour

Whole wheat goods tend to be slightly more expensive than white flour goods, but whole wheat flour is pretty inexpensive. If you would like your family to eat more whole wheat flour, try buying a store brand of whole wheat flour. At the time of writing this (Dec 2023), the Target brand Good & Gather 5lb bag of whole wheat flour is $2.49 at my local store, which is the same price as their store brand of all-purpose flour. Whole wheat flour is unrefined, which means the baked good will turn out a bit denser than all-purpose flour. You can use all-purpose flour as well by substituting it for whole wheat flour 1:1.

Can I Meal Prep these Easy Whole Wheat Peanut Butter Applesauce Waffles

YES, YES, YES!

I just finished up a BIG batch of breakfast meal prepping, and these were the perfect addition to my freezer prep. For these Easy Whole Wheat Peanut Butter Applesauce Waffles I suggest cooling them on a wire rack. After the waffles are completely cool, pop them into a freezer bag and store them for up to 4 months. Heat up as desired in the toaster (my preference) or microwave them up for a few seconds.

Ingredients

  • 2/3 cup unsweetened applesauce
  • 3/4 cup unsweet vanilla almond milk
  • 3 tbsp melted peanut butter slightly cooled
  • 1/4 cup melted butter slightly cooled
  • 1 egg whisked
  • 1 1/2 cup whole wheat flour
  • 1/2 tsp salt
  • 1/2 tsp cinnamon
  • 2 tsp baking powder

Instructions

  • Heat up waffle iron.
  • Melt peanut butter by placing the 3 tbsps in a microwave-safe dish. Microwave for 30 seconds.
  • Blender Mixing Method: Add all ingredients to the blender and blend until just combined.
  • OR Bowl Mixing Method: Combine applesauce, melted peanut butter, melted butter, whisked egg, and almond milk in a medium bowl. In a large bowl, add the rest of the dry ingredients to the bowl. Combine the wet ingredients into the dry bowl.
  • Spray waffle irons with baking spray. Add large spoonfuls of batter onto the waffle iron and close the lid.
  • Bake for 3-5 minutes, or until your waffle iron runs through a cycle.
