Tips for Making the Best Breakfast Cookies

Are you looking to make the best healthy peanut butter chocolate chip breakfast cookies? Check out these tips to make the best breakfast cookies out there!

Don’t Overbake The Cookies

These are soft-baked cookies, and can easily be overbaked. The cookies are very soft and can look like they are underbaked. Follow the cooking times in the recipe below and make sure to take the cookies out of the oven before the bottoms burn.

Scoop the Cookies Into Mounds

Healthy peanut butter chocolate chip breakfast cookies are not like typical cookies. Unlike other cookie recipes, you will be scooping dough like other cookies. Instead, scoop the cookies on parchment paper into cookie “mounds”. The cookie mounds will bake together to become cookies.

Save A Few Peanuts and Chocolate Chips

To make your breakfast cookie look just a bit cuter, set aside a few of your chocolate chips and chopped peanuts to add to the top of the cookies. 🙂

Are Breakfast Cookies Healthy?

Breakfast cookies are healthy alternatives to regular cookies. These cookies use whole-grain oats, all-natural sweeteners, and protein from the peanut butter. These soft-baked breakfast cookies use bananas as a binder.

Healthy Peanut Butter Chocolate Chip Breakfast Cookies Ingredients

All of the ingredients in these pantry-staple breakfast cookies. Healthy cookies are the perfect cookies.

Bananas: Use 2 overripened bananas in these cookies.

Creamy Peanut Butter: You can use crunchy peanut butter or creamy peanut or almond butter. Choose your favorite nut butter. I prefer creamy peanut butter.

Old-Fashioned Oats: Use old-fashioned oats or rolled oats instead of quick-cooked oats. Old-fashioned oats will have the right texture. Quick cook oats can turn out mushy.

Chopped Peanuts: Chopped peanuts add a nice crunch to breakfast cookies. Use unsalted dry roasted peanuts.

Dark Chocolate Chips: Pick your favorite chocolate chips (we like dark chocolate chips) or chocolate chunks.

Honey: You’ll want to use honey as your natural sweetener in this recipe. The honey helps to hold together the cookies. Don’t use other sweeteners in these cookies like agave or brown sugar, since the cookies will not hold together the same way.
