Air Fryer Potato Nachos

Air Fryer Potato Nachos are inspired by my love for Taco Bell’s Fiesta Potatoes! Don’t get me wrong, regular nachos are good, but nacho toppings on potatoes are DELICIOUS!!! These quick air-fried potatoes are crispy on the outside, and fluffy in the middle! This recipe makes 2 servings of potato nacho entrees or 4-6 side dishes.

And let’s be honest– crispy potatoes are definitely the perfect vehicle to be absolutely smoothed in loads of queso and guacamole! Once you potato, you’ll never go back.

How to Make Air Fryer Potato Nachos

These air fryer potato nachos are incredibly easy, and a great recipe for older children and tweens to get involved in the kitchen (practice those knife skills early, folks)! Potato nachos make an easy side and are a family favorite of ours (everyone gets to top their own)!

Chop the poTATos 🙂

The longest prep of this whole recipe is the chopping! Wash and chop yellow potatoes into small 1/2-inch cubes. I personally, do not peel the potatoes, but you can if you would like too. Just make sure to wash your potatoes well!

Technically, you. can buy pre-diced potatoes from the freezer section (it will cost a little more and the air fry time might need to be adjusted).

Preheat the Air Fryer

I find that potatoes do best in a preheated Airfryer! This might just be my opinion, BUT I really do think it makes a difference in the crispiness of the potato. PLUS, there is a very satisfying sizzle that occurs when you place the potatoes into a preheated air-fryer.

Regardless, you will want to preheat your air fryer to 400℉.

Season the Potatoes

Toss the chopped potatoes in a large bowl. Add olive oil and all of the seasonings to the bowl and toss, toss, toss until all the potatoes are evenly coated.

Air Fry the Nacho Potatoes

Now that our potatoes are evenly seasoned, we can toss them into our preheated air fryer to fry! Keep an eye on the potatoes, I find that about 16 to 20 minutes creates perfectly golden brown potatoes.

Now we can move on to the FUN part!

Toppings for Air Fryer Potato Nachos

I love recipes that everyone can individualize. It makes hosting or eating with kiddos, very easy! Below are some of our favorite toppings for air fryer potato nachos.

  • Queso con Salsa or regular Queso
  • Hot Sauce
  • Shredded cheese (like cheddar or pepper jack)
  • Sour Cream

It’s up to you to add whatever you like to your potato nachos! You can also enjoy these potatoes just the way they are, add them to a flour tortilla for a potato taco, or serve them alongside a southwestern omelet. The world is your oyster nacho plate!

Why Use Potatoes Instead of Chips for Nachoes?

Well short answer… they are amazing.

But seriously, have you tried the fiesta potatoes at Taco Bell??? Those babies changed my mind on how nachos should be constructed. Potatoes give you all the crispiness you need for the base of any respectable plate of nachos and offer a pillowy, soft inside that no chip can give you.

Can This Recipe Be Doubled?

Yes, this recipe can be easily doubled! As is, the recipe makes about 2 entrees or 4-6 side dishes. You can double for 4 entrees (I usually do this).

To double the recipe, add the doubled potatoes, seasonings, and oil to a bowl and toss together. Then split the potatoes in batches for the air fryer. I typically will fry two batches in my 6 qt air fryer when I double this recipe. An overcrowded air fryer results in soggy potatoes.

Avoid soggy potatoes.

Can This Recipe Be Made Ahead of Time?

This recipe is best made right before eating! The air fryer nacho potatoes will be at their crispiness right when they come out of the air fryer!

You can make these potatoes in advance, but just like fries, they lose their crispiness the longer they sit. If you make them ahead of time, you’ll likely want to reheat them in the air fryer to get some of the crispiness back.

What Should I Serve with Air Fryer Potato Nachos?

I like to serve my air fryer nachos with toppings that I would normally serve for traditional nachos.

But you can do some much with these potatoes! Here are some examples:

  • Add them to breakfast burritos
  • Use them to copy cat Taco Bell potato tacos
  • Add scrambled eggs, black beans, cheese, and guacamole for a southwestern cowboy bowl!
  • Serve alongside Peruvian Chicken

Ingredients

Nacho Potatoes

  • 1 lb yellow potatoes cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp chili powder
  • 1/2 tsp cumin

Nacho Toppings

  • Queso
  • Shredded Cheddar Cheese
  • Shredded Lettuce
  • Sour Cream
  • Guacamole
  • Salsa
  • Hot Sauce

Instructions

  • Preheat air fryer to 400℉.
  • Wash the potatoes, and cube potatoes into 1/2 inch pieces. (Remove skin before cutting the potatoes, if desired). Add potato cubes to a large bowl and toss the potatoes with oil.
  • In a small bowl, add all of the seasons and mix together.
  • Add the seasoning to the bowl with the potatoes. Toss until the potatoes are well-coated.
  • Air fry the potatoes for 17-20 minutes. Potatoes should be crispy and golden brown when they are done!
  • Top the potatoes with all your favorite taco fixings like: shredded lettuce, queso con salsa, gaucamole, shredded cheese, etc.
