Bacon Cucumber Tomato Sandwich with Herbed Cream Cheese: It’s like a BLT but better! Instead of lettuce, swap it out with a crunchy cucumber, and instead of mayo use a DELICIOUS dilly cream cheese. These sandwiches are SO easy! They are perfect for lunch boxes, picnics, or on-the-go dinners!

I love sandwiches. I really do. Especially in the summertime. They just make such great, easy meals that you can stock your fridge with and eat in a moment’s notice on the go! These Bacon Cucumber Tomato Sandwiches are one of my favorite sandwiches. Before a big road trip, I ALWAYS make these sandwiches to avoid having to go through the drive-thru. They are a big hit & have saved us a ton of money!

Ingredients You’ll Need

This 5-ingredient (with the addition of a few minor pantry additions) sandwich is SO easy to make you’ll have it done in NO time!

  • Bacon or Turkey Bacon
    • This is controversial, but my husband and I prefer turkey bacon–I know– we are crazy. Either way, you’ll need 8 strips of cooked bacon.
    • If you buy regular bacon (which typically comes in a pack of 12, check out this recipe that calls for 4 strips: Bacon Cheeseburger Salad with Sesame Bun Croutons. You can prep the bacon once, and get two recipes (with 12 total servings) out of 1 pack of bacon.
  • 8 oz block of Cream Cheese
    • A key part of our bacon cucumber tomato sandwich is elevating it with a dilly cream cheese. We will make this cream cheese even better with dried dill and other pantry staples!
    • If you want an easier route– buy some herbed cream cheese premade at the grocery store.
  • Cucumber
    • Buy whatever cucumbers you like. If I use mini cucumbers, I typically don’t peel them, since they have thinner skins. If I use a large cucumber like an English cucumber, then I typically peel it.
  • Tomato
    • Get Roma or beefsteak tomato (check the section below on how to elevate your bagel sammies.
  • Everything Bagel – Bagel Thins
    • Bagel thins are great in this recipe they provide the perfect bread to topping ratio. Sourdough is also a great choice. But you can choose whatever you prefer! If you use regular bagels instead you will want to use more toppings + bacon.

3 Ways To Elevate Your BCT (Bacon Cucumber Tomato Sandwich)

These bacon cucumber tomato sandwiches are good as is, but I’m going to let you in on a few secrets to make these sandwiches even better!

Add a Squeeze of Lemon Juice

If I have a lemon on hand, I like to add a little squeeze of lemon on top of the cucumber and tomato. It brightens up the veggies and, trust me, they taste so good with a little extra care.

Salt the Tomatoes

Just as important, if not more important, than adding a bit of lemon on top of your cucumber and tomato sandwiches is adding a bit of salt to the tops of your tomatoes! Salt loves tomatoes. And tomatoes need salt. Add a sprinkle of flaky salt on top of your tomato slices on your sandwich–trust me.

Choose Your Bread Carefully

You can’t go wrong with everything bagel thins or sourdough slices in this recipe!

I’ve heard before that the bread is the Canvas of your sandwich. Well, I guess that is true. When choosing your bread consider the taste that you are going for with your sandwich.

If you have time to toast the bread, do it.

Not all grocery discount stores are the same so I suggest shopping around for example, some discount stores will sell items that are closer to the sell-by dates, some will only sell overstock items, and some are fine with selling items past the sell-by date. It’s best to check out the discount stores near you for what you are looking for.

If you live in the Central PA area, then you have got to try out some of my all-time favorite grocery discount stores.

Sharp Shopper: (Middletown, PA) Has the BEST freezer section and snacks sections.

Grocery Outlet: (Camp Hill, PA) Has the most consistency and feels the most like a traditional grocery store. Has the BEST selection of healthy/organic items and personal care items.

BBs: (Quaryville, PA) Has a GIANT walk-in freezer full of good deals! Check dates closely.

What to Eat With Your Bacon Cucumber Tomato Sandwich

We like to keep it simple: chips, maybe a side salad, sliced fruit, pretzels. You get the picture. This is a meal for when you need a quick fix, and your sides need to be quick and packable as well.

Ingredients

Herby Cream Cheese

  • 8 oz cream cheese softened
  • 1/8 tsp garlic powder
  • 1/8 tsp ground pepper
  • 1/4 tsp dried oregano
  • 1 tsp dried dill

BCT Sandwiches

  • 8 bacon or turkey bacon slices
  • 8 bagel thins
  • 2 beefsteak tomatoes sliced
  • 2 medium cucumbers

Instructions

  • If the bacon isn’t already cooked, cook the bacon according to the package instructions.
  • Place softened cream cheese and all the seasonings inside a medium mixing bowl. Using an electric hand mixer, mix all the ingredients until well combined. Set aside.
  • If eating immediately, toast the bagel thins. (If you are prepping sandwiches for another day/later skip this step, they will still be good!).
  • Add cream cheese to each bagel thin, then add cucumber, tomato and bacon. To futher elevate the flavors sprinkle salt and a squeeze of lemon juice on top of the tomatos.
  • Enjoy your sammies. Eat the sandwiches within 3 days.
