Is Banana Bread Baked Oatmeal With a Nutella Swirl Healthy

Healthy-ness varies from individual to individual, but overall this baked oatmeal is full of fiber and whole grains! This recipe is adapted from my family’s amish-style baked oatmeal recipe. Amish-style baked oatmeal is a dense, cake-like style of homemade baked oatmeal. Since this recipe utilizes mashed bananas, which replace some of the oil/fat content, the amount of fat that is traditionally in Amish-style baked oatmeal is reduced.

However, if you are looking to make this recipe healthier or plant-based, then you can easily adapt it to suit your preferences. Check out these easy healthier swaps:

  • Swap the butter for melted refined coconut oil
    • Coconut oil has a one-to-one swap for butter. It is the most butter-like non-dairy substance, because, like butter, it is solid at room temperature. In terms of health– there is some debate about whether or not butter or coconut oil is healthier check out this article. However, if you are looking for a plant-based alternative then coconut oil could be right for you.
  • Swap out brown sugar for honey or pure maple syrup.
    • To use a more natural form of sweetener, consider swapping out the brown sugar for natural honey or pure maple syrup. Swap these 1 to 1.
  • Use your choice of milk
    • I typically use unsweetened almond milk when I make this banana bread baked oatmeal (or any baked oatmeal). The recipe calls for “milk” but using any milk (ie skim, 2%, soy, almond) will work well.

How to Swirl the Nutella in Banana Bread Baked Oatmeal

Banana bread baked oatmeal is good all by itself without the addition of Nutella. But a little Nutella is always a good call as far as I am concerned!

How to make Banana Bread Baked Oatmeal

To make the best baked oatmeal mix all of the dry ingredients in one bowl and then mix in the wet ingredients. Stir until combined and dump your banana bread baked oatmeal mixture into a 9×9 baking dish.

How to Create the Nutella Swirl

Follow the steps above to create the banana bread baked oatmeal and then you are ready for the decadent Nutella swirl!

  • Dollop your Nutella on top of your baked oatmeal ( I like to make 4 big dollops)
  • Using a clean butter knife, stick the knife in the middle of the Nutella blob and begin to swirl the Nutella outward. Repeat on all four of the dollops.
  • Don’t over-swirl! Believe me–it is super easy to get carried away with the swirl, but make sure to stop so that the oatmeal and Nutella don’t just blend together. We want to keep distinct swirls in the oatmeal (for the best look and taste).

For the best taste, this baked oatmeal is best enjoyed warm. The melty, fudgy, gooey Nutella is FANTASTIC when it is warm! Don’t worry, you can still make it ahead of time. Check out my reheating instructions to serve.

Is Baked Oatmeal A Good Brunch Recipe

Yes! Banana bread baked oatmeal with a Nutella swirl is a FANTASTIC brunch dish!

It’s fast, easy, and can be prepared ahead of time. That’s all the makings of a SLAM DUNK breakfast if you ask me!

If you are planning to make this ahead of time (go you!), then make sure to reheat the slices (or warm the whole casserole) before serving. I like to reheat my baked oatmeal (slice) in the microwave for about 30-45 seconds. That way, you can get all that gooey, fudgey Nutella action, and it will taste like your baked oatmeal just came out of the oven.

How to Store Baked Oatmeal (and Reheating Instructions)

Baked oatmeal can be left out on the countertop (covered) for up to 3 days.

BUT, we typically place ours in the refrigerator (covered). Especially when you are baking a baked oatmeal that has fruit in it, the fridge will extend the life of your baked oatmeal significantly up to 5-7 days. To me, it’s worth it to keep my baked oatmeal in the fridge.

Prior to storing your baked oatmeal, make sure it fully cools before wrapping it tightly with plastic wrap and placing it on the countertop or in the fridge.

To reheat your banana bread baked oatmeal follow the following instructions:

  • Whole Baked Oatmeal Pan:
    • Turn your oven on to “warm.” Cover your baked oatmeal with aluminum foil and warm for at least 10 -15 minutes.
  • Slice of Baked Oatmeal:
    • Place a slice of baked oatmeal on a microwave-safe dish or plate and heat up for 30-45 seconds.

Ingredients

  • 3 cups rolled oats
  • 1 tsp salt
  • 1/2 tsp baking powder
  • 2 mashed bananas 3/4 cup
  • 2 eggs
  • 1 tsp vanilla
  • 3/4 cup brown sugar
  • 1/4 cup melted butter slightly cooled
  • 1 cup milk
  • 1/2 cup Nutella

Instructions

  • Preheat oven to 350℉ degrees. Spray a 9×9 baking dish with baking spray.
  • Mix the dry ingredients (rolled oats, baking powder, and salt) in a large bowl.
  • Add wet ingredients (all other ingredients except for the Nutella) to a small bowl and stir until just combined.
  • Add the wet to the dry ingredients and stir until just combined.
  • Dump the banana bread oatmeal mixture to a 9×9 baking dish.
  • Dollop your Nutella on top of your baked oatmeal ( I like to make 4 big dollops)
