Are Biscotti Cookies?

Yes, biscotti are cookies! However, you might have noticed that these cookies are quite hard. That is because biscotti are known as Italian twice-baked cookies.

The double bake on these cookies makes an incredibly dry-biscuit-like cookie. Biscotti is best enjoyed dipped in a hot drink like tea or coffee. And are typically not consumed on their own. These dry cookies are meant to interact with the coffee and soak up all that excellent flavor and liquid in the cookie.

What makes a biscotti truly a biscotti is that double-bake that we talked about earlier. The cookies are first baked as a log and then are sliced into individual biscotto (that is the singular form of biscotti), before re-baking at a lower heat.

How to Make Better than Bakery Almond Joy Biscotti

Want to make homemade almond joy biscotti at home?! Don’t worry, this biscotti recipe is a simple and nearly foolproof cookie recipe. Follow the recipe below to make biscotti that’s better than any bakery!

The First Bake

  • Preheat the oven to 350℉ and line two baking sheets with parchment paper.
  • In a stand mixer, cream the butter, sugar, and extracts together until smooth and creamy.
  • Add in the eggs and mix until just incorporated.
  • Next, add the baking powder, flour, and salt and mix until smooth. Stir in roughly chopped almonds. The dough will be less “stiff” than most cookie doughs.
  • Then divide the dough in half, and form 2 individual logs each about 10 inches long and about 4 inches wide on the parchment-lined baking sheet. (To shape the dough and avoid a sticky mess, I suggest slightly wetting your fingers with water before shaping the dough). I typically place and shape the second half of the dough on a second parchment-lined baking sheet.
  • Bake the cookie logs at 350℉ for 20 to 25 minutes (until the edges start to turn to a golden brown color (do not let the logs over brown). Remove the cookie logs from the oven and let them cool on the sheet for 20-25 minutes before attempting to slice them.

The Second Bake

  • Reduce the oven temperature to 325℉, and then slice the cookie logs into individual 1-inch wide biscotti with a serrated knife. Use a sawing knife motion to slice the cookies with minimal breakage.
  • Place sliced cookies cut side down on a baking sheet. Bake the cookies at 325℉ for another 20-25 minutes.
  • Remove the cookies from the oven and let them cool to room texture.
  • Melt dark chocolate chips in the microwave. Dip biscotti in the melted chocolate on one side. Sprinkle toasted coconut and flaky sea salt on top.

How long will Almond Joy Biscotti Last

Biscotti can last in a sealed container for up to 2 weeks! I KNOW!

This is a CRAZY lifespan for a cookie and is one of the things that I love most about biscotti.

Longer shelf life = more opportunities to enjoy biscotti and coffee!

What Should I Drink with Biscotti

Almond joy biscotti are cookies that are meant to be dipped into a drink before eating. Since they are cookies that are meant to be dipped, they are very hard cookies that are a lot more enjoyable to eat with a hot beverage than on their own. I do not recommend them as a “eat on their own” cookie.

Biscotti and coffee are my favorite combo! Here are my favorite tea and espresso drinks to combine with almond joy biscotti:

  • Affogato
  • Chai Tea Latte
  • Regular Coffee
  • English Breakfast Tea (with milk and honey)
