Okay, imagine creamy coconut milk oatmeal studded with gorgeous blueberries baked in a comforting Amish-style baked oatmeal. MMmmmmmm! On my quest to make the BEST baked oatmeal recipes, this blueberry coconut baked oatmeal is truly a winning breakfast recipe!

I have baked oatmeal in many ways, but baked oatmeal with coconut milk takes baked oatmeal to a whole new level! If you love the flavor of coconut milk in baked goods or cooking recipes–you have got to try this coconut baked oatmeal out!

Can You Make Baked Oatmeal With Canned Coconut Milk

Yes! You can definitely make baked oatmeal with canned coconut milk–that’s why this recipe exists! 🙂

This recipe will work if you use other types of milk (ie regular, soy, almond, cashew, etc…), I suggest only using canned coconut milk to make the best use of all that coconutty goodness! Otherwise, this recipe will not taste that strongly of coconut.

The Ingredients for Blueberry Coconut Baked Oatmeal with Coconut Milk

Baked oatmeal is a wonderful breakfast, when you need to create something using pantry-staple ingredients. We can elevate these simple ingredients that you might already have in your pantry, fridge, and freezer into a fancy-looking breakfast. If you have seen baked oatmeal at the store–you’ll notice it usually comes with a larger price tag. Homemade baked you can make for pennies on the dollar. We don’t even have to tell anyone how simple baked oatmeal is to make from scratch! 😉

Check out the ingredients below for my suggestions and substitutions!

Oats: You’ll want to use rolled oats/old-fashioned/steel-cut oats ONLY in this recipe. Quick cook oats should technically work, but they often produce an odd texture.

Canned Coconut Milk: Make sure to use a can of coconut milk-not the coconut milk that you’ll find in the refrigerated section of the grocery store. Canned coconut milk is thicker and denser than the stuff you’ll find in the carton–it also has much more coconut flavor.

Sugars: I use brown sugar which is pretty traditional for an Amish-style baked oatmeal. You can swap it out for natural sweetener like honey–although, I haven’t tested it out in this particular recipe it has worked for other baked oatmeal recipes. If you swap out the sweetener, let me know how it goes in the comments below.

Blueberries: I use frozen blueberries in this recipe because 1) they weren’t in season while I was creating this recipe and 2) the frozen are really inexpensive and still contain all the good nutrients that we want to eat from blueberries. Unsweetened Coconut Flakes: We have enough sweetness in the rest of this recipe. Make sure to use unsweetened coconut flakes in your recipe. 🙂

How To Make Blueberry Coconut Baked Oatmeal with Coconut Milk

Are you ready to make the BEST coconut baked oatmeal with coconut milk!?! Trust me, it’s a fabulously easy recipe!

  • Preheat the oven to 350℉ degrees. Spray a 9×9 baking dish with baking spray.
  • Mix the dry ingredients (rolled oats, baking powder, coconut flakes, and salt) in a large bowl.
  • Add wet ingredients (brown sugar, eggs, vanilla, canned coconut milk, and oil) to a small bowl and stir until just combined.
  • Add the wet to the dry ingredients and stir together.
  • Dump the oatmeal mixture into a greased 9×9 baking dish. On top of the oatmeal, place the frozen blueberries on top, and gently push them slightly into the coconut oatmeal mixture (you don’t want to submerge the blueberries).
  • Bake the blueberry coconut baked oatmeal for 30-35 mins.

What is Amish-style Baked Oatmeal?

Amish-style baked oatmeal is more dense, cake-like, and cozier than other types of baked oatmeal.

Amish-style baked oatmeal is one of the MOST comforting breakfast dishes known to man. And it makes my little Pennsylvanian Dutch heart warm every time I eat it… which in our house is weekly. If you have never tried Amish-style baked oatmeal, you are missing out.

It’s one of the best breakfast “casserole” recipes and it’s SO easy and inexpensive to make.

How to Serve Blueberry Coconut Baked Oatmeal

You can serve blueberry coconut baked oatmeal hot or cold, personally, we like ours hot. Sometimes, we will enjoy it hot with a splash of cold milk on top! YUM!

Let’s be real–this baked oatmeal is the MAIN event! While this oatmeal SHINES on it’s own, fresh fruit like bananas, strawberries, and fresh blueberries are a great side with coconut-baked oatmeal.

What to Do with Leftover Canned Coconut Milk

  • Make Coconut Rice
    • Swap out some of the water in your rice with coconut milk! DELICIOUS! Coconut milk rice adds a slightly sweet coconutty flavor that goes so well served with summer kebabs.
  • Add it to Your Morning Coffee
    • Canned coconut milk adds a slightly sweet, tropical taste to your morning fuel! Need a summer beverage? Kick up your iced coffee with coconut milk! YUM! This is a fabulous non-dairy alternative to traditional coffee creamers.

I typically meal prep baked oatmeal ahead of time, and then heat up individual slices in the microwave as needed. You will want to heat each slice up for 30-45 seconds.

Storing Instructions

Baked oatmeal lasts the longest when it is refrigerated. I suggest storing your blueberry baked oatmeal covered in the refrigerator for up to 5-7 days.

  • 1/2 tsp baking powder
  • 3/4 cup brown sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup vegetable oil

  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup blueberries

Instructions
