The dining hall that I went to at my midwestern college had three hot breakfast options pancakes, scrambled eggs, and sausage gravy and biscuits. The number of sausage gravy biscuits I ate during that time had to be in the zillions. It was college, right?

Fast forward to adulthood, and I still CRAVE those biscuits. But alas, I no longer have the benefit of going to the dining hall for a prepared breakfast every day. As teachers, my husband and I have busy mornings. So quick, easy, and filling breakfasts are what we are looking for to get us going early in the morning. This is the perfect easy breakfast recipe for on-the-go. These are portable and simple to easily microwave.

How To Make Cheesy Sausage Gravy and Biscuits Cups

This recipe is so simple! In no time you will have a freezer or fridge full of sausage gravy and biscuits cups.

  • In a skillet brown the sausage, and drain the excess fat. If you are cooking a whole pound, then move half to a container for another meal. Place sausage aside.
  • In a medium saucepan over medium heat add the flour and butter stir until incorporated and then add the milk, seasoning, and sausage.
  • Stirring continuously, cook the mixture until the gravy starts to thicken, about 10 to 12 minutes. Then remove from heat
  • Preheat the oven to 350 degrees. Spray a muffin tin with baking spray.
  • Open the can of jumbo biscuits place one biscuit in each muffin tin and press the biscuit to create a crater in the middle.
  • Spoon the sausage gravy into the crater of each biscuit cup and sprinkle shredded cheese, if desired on the top of each cup.
  • Then bake the cups for 15 minutes or until golden brown along the edges.

Meal prepping is great because you can make large quantities, but it can be wasteful if the large quantities aren’t planned out for what can feasibly be consumed. This recipe uses only 0.5lb of sausage, and while you can double the recipe to make more biscuits, you can also stretch the other half pound to another recipe. I used my excess half pound in a potato soup, but you can use yours in a quiche, pizza, pasta, soup, casserole, etc.

If you have not heard of it before it is a wonderful cookbook about being mindful of what we have and contributing to waste and consumerism less.

The meat section of the cookbook explains unlike the US, most cultures do not consume very much meat, and when they do they tend to spread the meat out throughout many servings. Does this Recipe Freeze Well?

Yes! You can either store your Cheesy Sausage Gravy and Biscuit Cups in the fridge for about 5 days or you can freeze them for 3 months. Before freezing the cups, let them cool to room temperature.
