I have to warn you before consuming Copycat Brazilian Steakhouse Baked Pineapple because WOW this caramelized pineapple is addicting. And it’s also WAYYY too easy to make. Yes, its ease makes it wonderful for an easy dessert recipe, but it also finds its way onto my menu a little too often! Once you make it one time, you will be so hooked that you will never look at pineapple the same way again. Consider yourself warned.

  • Pineapple: Use 1 whole pineapple in this recipe. Make sure the pineapple is ripe before you use it. I test the pineapple’s ripeness by gently tugging on the top leaves (fronds) of the pineapple a leaf or frond. If a leaf pulls out easily, then the pineapple is ripe and ready to go. You can cut the pineapple up as you please. I prefer chunks of pineapples, but rings or spears are also delicious.
  • Butter: This recipe needs BUTTER. I have seen other recipes that call for oil instead of butter, but the butter has the best dessert-like taste in this recipe. I use unsalted butter and add a pinch of salt to the pineapple to bring out the pineapple’s natural sweetness. You can knock out the salt if you use salted butter.
  • Cinnamon: I love cinnamon, but it is possible to overdo it quite easily. Believe me, I have overdone it before. Stick to 1 tsp (2 tsp most) for an entire pineapple.
  • Brown sugar: I personally will only ever make this Copycat Brazilian Steakhouse Baked Pineapple with brown sugar. Brown sugar perfectly creates a carmelized toffee-like flavor on the roasted pineapple. You can also use white sugar in a pinch, but brown sugar has a much deeper flavor profile.

  • Preheat the oven to 375 degrees Fahrenheit and line a sheet pan with parchment paper for easy cleanup.
  • Cut the pineapple. While I think traditionally spears of pineapple are used at Brazilian steakhouses, I prefer to cut my pineapple into chunks. I think it’s easier to eat (especially for kids) and it’s easiest to chop, in my opinion. You can also cut the pineapple into rings, but honestly, that takes some time.
  • Add the brown sugar, cinnamon, and salt to a large freezer bag (you can also use a large bowl). Shake the bag to mix the coating. Then add the pineapple to the bag, and shake it until the pineapple is evenly coated.
  • Dump the bag onto the lined sheet pan and spread the pineapple into an even layer. Add slices of cold butter on top pineapple. Bake at 375 degrees Fahrenheit for 15-20 minutes.
  • Remove the pan from the oven and stir the roasted pineapple on the sheet to evenly distribute the melted butter.
  • If desired, serve the baked pineapple with a scoop of vanilla ice cream or dulce de leche ice cream šŸ™‚

Can I Make Copycat Brazilian Steakhouse Baked Pineapple Ahead of Time?

Yes! You definitely can prepare this pineapple ahead of time and reheat it in the microwave before serving, but I prefer to mix it together and roast the pineapple right before serving. If I want to prep this recipe for guests, I typically will add the brown sugar, cinnamon, pinch of salt, and pineapple to a gallon-sized freezer bag and shake the pineapple and coating together. Then I stick the bag into the fridge and prepare a lined baking sheet.

When I am ready to make this dessert, I dump the pineapple bag onto the baking sheet, top it with butter, and bake it up. That’s it! šŸ™‚ I love recipes that you can easily make while still enjoying your company.
