Cranberry Chicken Salad with Almonds and Apples

If you love Aldi’s Cranberry Chicken Salad, then you have got to try this homemade easy chicken salad. Chicken salad is one of my favorite things to eat (and make) it’s an easy no-cook lunch box meal prep that you can have done in literally minutes!

When I got my first “big girl” job post-college– I stocked my fridge full with the Aldi Cranberry Chicken salad cups. I ALWAYS had them on hand to eat for lunch or dinner (sometimes lunch and dinner). I loved being able to throw them into my lunch box.

Soon after, I moved to an apartment with a REAL kitchen with a REAL-sized fridge and began making chicken salad for myself. And I have to tell you, it’s much better than the ALDI’s cups, and more budget-friendly.

Should I use Greek Yogurt or Mayo in Chicken Salad?

Okay, okay so after many recipes and a lot of testing here is my answer: BOTH.

I find that all-mayo is a bit too mayo-y. Do you know what I mean? To me, it tastes a bit eggy and greasy with all the mayo.

But all Greek yogurt can be a bit to yogurt-y. A little too tangy and too loose.

A mixture of both the Greek Yogurt and the Mayo is the perfect combo in my book!

Can I use All Mayo or All Greek Yogurt in This Salad?

Yes, you totally can use just one of the condiments. See my notes above as to why I prefer a mixture, but honestly, it’s your chicken salad. You do you, boo!

How Should I Serve Cranberry Chicken Salad

Simple answer– however you like it!

I like it one of 3 ways: in a sandwich, on crackers, or on top of a salad. Go for the option that you like best!

We typically choose to eat our chicken salad as a sandwich on croissants, ciabatta rolls, or toasted whole wheat bread. But it’s really up to you. At work, I like to pack my chicken salad with crackers.

How Long Will Cranberry Chicken Salad Last?

Chicken salad will last in an air-tight container for up to 3-4 days.

Ingredients

  • 2 cups cooked chicken shredded or chopped
  • 1/4 cup chopped unsalted almonds
  • 1/4 cup chopped red onion
  • 1 medium apple diced
  • 2 stalks of celery chopped
  • 1/3 cup mayo
  • 1/4 cup plain greek yogurt
  • 1 tsp fresh lemon juice
  • 1/4 tsp salt
  • ground pepper to season

Instructions

  • Add all of the ingredients to a large bowl and mix together.
  • Enjoy chicken salad on the top of crackers, a salad, or sandwiched in croissants or bread.
  • Store chicken salad in an airtight container for 3-4 days.
