Alright baked oatmeal lovers, listen up, because this Blueberry Cheesecake Baked Oatmeal is the BEST breakfast I have ever had. There I said it. This is one of those recipes that you consider not sharing because it’s SO good that you want to keep it a secret. But then again, it is too good NOT to share. (Sorry for the unhinged all-caps, but when you try this, you’ll understand too). This is a baked oatmeal recipe fit for special occasions: ie Christmas breakfast, Valentine’s Day Breakfast, Easter Brunch, a Bridal Shower Brunch, Tax Day, or even a random Thursday in August.

A lot of my recipes exist from a surplus, or the need to use up an ingredient in my pantry or fridge. Blueberry Cheesecake Baked Oatmeal started from the same backstory: an extra 4oz of a block of cream cheese. I was trying out a recipe that called for 1/2 a block of cream cheese a few days ago, which meant that 4 days later, I had a very lonely, and forsaken 1/2 block of unused cream cheese STILL in my fridge.

The solution: my lifelong dream of cheesecake for breakfast came to life. With the help of some frozen berries, and my Amish-Style Baked Oatmeal recipe, of course. I modified the recipe and added a cheesecake swirl that is sure to make you swoon.

Blueberry Cheesecake Baked Oatmeal Ingredients

Rolled Oats

I like to use rolled/old-fashioned oats in my baked oatmeal. These will produce the right taste and texture in the final baked good. I would avoid using quick-cooked oats in this recipe.

Frozen Blueberries

Use frozen blueberries or fresh blueberries in this recipe. I like to use frozen blueberries, especially in the winter, in baked goods since they are so inexpensive and have the best quality at this time of year. Either fresh or frozen will work. You can also swap blueberries for a different type of berry that you desire or have on hand.

Cream Cheese

Use up half a block of cream cheese in this recipe. You only need 4 oz to create this decadent cheesecake topping. Soften the cream cheese before you use it to swirl the cheesecake into the baked oatmeal more easily. I also like to add a splash of milk to the cheesecake topping for easy swirling. You can’t go wrong with Blueberry Cheesecake Baked Oatmeal.

Sugars

I like to use brown sugar in the baked oatmeal for a delicious caramel flavor and white sugar in the cheesecake mixture for the best look & taste.

Can I Use Other Berries Instead of Blueberries in this Recipe?

Yes! Please do!

You can use any type of berry you would like instead of blueberries. I like raspberries and chopped strawberries for this recipe as well.

How to Make the Best Blueberry Cheesecake Baked Oatmeal

Looking for an easy breakfast idea? Well, then you have got to try this decadent baked oatmeal. It’s one of those recipes that looks like it took a long time to prepare, but SSSSSSH, it’s a breeze to whip up. Here is how you can make your own batch.

  • Preheat the oven to 350 and spray and 9×9 baking dish with baking spray. Set the dish aside.
  • In a large bowl, mix the dry ingredients for the baked oatmeal. In a smaller bowl, mix the wet ingredients, then add the wet ingredients to the dry ingredients.
  • Stir the wet and dry ingredients until they are just incorporated (the mixture will be very wet). Spread the baked oatmeal into the greased dish.
  • In another bowl, beat the cream cheese, sugar, vanilla, and milk together until it is smooth and creamy. Then gently fold in the frozen blueberries until just incorporated. The mixture will turn purple if you overmix it.
  • Dollop the blueberry cheesecake topping on top of the baked oatmeal. Using a knife, gently swirl the cheesecake into the baked oatmeal. Top with more blueberries, if desired.
  • Bake for 35-45 minutes. You might notice some of the cooking liquid around the edges of the baked oatmeal as it is baking, but the baked oatmeal will be done baking when the edges of the baked oatmeal are golden brown and the center looks set. Remove the baked oatmeal from the oven when the edges of the oatmeal look brown. Let the oatmeal sit for 15 minutes. At this time, any excess baking liquid will absorb into the baked oatmeal as it cools.
  • After the baked oatmeal has cooled for 15 minutes, enjoy!

How To Store Cheesecake Baked Oatmeal & Meal Prep Instructions

If you don’t eat the whole dish in one sitting, you can easily save this oatmeal for another meal. Make sure that the baked oatmeal is fully cooled, and tightly cover the oatmeal. Place the Blueberry Cheesecake Baked Oatmeal in the fridge and enjoy for the next 3-5 days.

To make your breakfast or brunch easier on yourself, you can make the baked oatmeal ahead of time. Prepare the cheesecake-baked oatmeal as normal. When it is done baking and has completely cooled down, you can go ahead and tightly cover the dish and refrigerate it. Reheat the baked oatmeal before serving it.

How to Reheat Blueberry Cheesecake Baked Oatmeal

I suggest reheating your oatmeal before eating. I like to serve out a piece of oatmeal heat it for about 30 seconds in the microwave and top it with a splash of milk (optional) before devouring.
