This super easy, Amish-inspired honey-glazed carrots recipe will be your new vegetable side dish favorite!

Sometimes the best things in life are the simplest. I believe that sentiment is true when it comes to recipes as well! Honey-glazed carrots are simple, buttery, and sweet… AND only require 4 ingredients (not including salt and pepper)! Honey-glazed veggies are a PA Dutch staple, and believe me, you will want to make this side all the time too!

Honey-glazed carrots are the perfect side dish for any meal!

Need an additional dish? You got it! Is someone new coming over for dinner? You can’t go wrong with honey-glazed carrots. Lost on what to add to your holiday table? These easy carrots even feel special enough for your occasion!

Prep the Carrots

First things first we need to prepare the carrots for this dish. Peel and chop the carrots into 1/4-inch coin-sized pieces. Add and heat a pot of water to the stove as you peel the carrots, so you can move on to the next steps faster.

Boil The Carrots

The thicker you cut the carrots, the longer you will need to cook the carrots. Boiling carrots is very similar to boiling a potato (although carrots, take less time). Just like potatoes, you will want to stop cooking the carrots when they become fork-tender. When the carrots are done cooking, drain the water from the pot, lower the burner’s heat, and add the pot with the drained carrots back to the stovetop burner.

Add the Butter and the Honey

Next, we will create our glaze. I have tried this recipe numerous ways before. For example, I tested if adding the butter and honey to a separate pan first and then adding the mixture back to the carrots would make a difference– but honestly, it didn’t make a difference, and one pot is a LOT easier to clean. Just add both the honey and butter to the pan and stir, stir, stir until the carrots have been even coated.

Season, Plate, and Serve

Season with salt and pepper until the carrots make you smile. Then dump the carrots into a lovely bowl or dish (or divvy up the serving for meal prep) and top with fresh parsley, if desired. Enjoy the carrots! Eat honey-glazed carrots in 4-5 days. Store leftovers in a sealed container in the fridge.

Honey-Glazed Carrots Ingredients You’ll Need

You’ll only need a few ingredients to make this simple, easy vegetable side dish. This is a perfect example of how sometimes simple could be better. For simple, comforting dishes like this one, you only need very few additions to make the dish shine.

Carrots

Hopefully, this was obvious– but you’ll need a few carrots for this recipe. I like to use large carrots, peeled and cut into 1/4-inch-thick coins.

Honey

Honey adds a bit of sweetness to our recipe. Carrots are already on the sweeter side, but the melted butter and honey will melt and combine to create a scrumptious sweet + holiday-like flavor.

Butter (or Margarine)

I like to use unsalted butter in all of my cooking and baking to control the amount of sodium that’s added to the recipe. I prefer the taste of butter to margarine, but I get it, margarine is cheaper and sometimes more cost-effective than butter.

Salt + Pepper

Season until you take a bite and smile. I like to season, stir, and taste a carrot to make adjustments as needed! Remember: you can add seasoning but can’t remove it.

Parsley

Parsley is completely optional. I only add it to this recipe when I have some on hand! I like the fresh bite that it adds to the buttery carrots, but no sweat if you don’t have parsley. These easy honey-glazed carrots will be fine without parsley!

What To Serve with Honey-Glazed Carrots

The great thing about a simple side dish like honey-glazed carrots is that it pairs with nearly any main! Chicken, beef, turkey, pork, etc all pair well with this simple side dish.

Can I Double This Recipe?

Yes, this recipe is wonderful for doubling, tripling, etc. Feel free to increase it to suit your family’s size and needs!

Can I Make these Carrots Ahead?

Yes, you can make these carrots ahead of time, but personally, I think these carrots are best when they are made the day of. The carrots can get a bit softer/soggier when they are made ahead. If it’s for a holiday meal, I would prep (peel + chop) the carrots ahead of time and then cook them the day of.

But with that being said, if you are meal prepping, this is a fine side to meal prep and portion out ahead of time with your main entree.

Ingredients

  • 4-5 large carrots
  • 1 tbsp butter
  • 1 1/2 tbsp honey
  • salt and pepper to taste
  • parsley if desired

Instructions

  • Peel and chop the carrots.
  • Fill a medium pot with water and season with salt (like pasta water).
  • Add the chopped carrots to the pot of water.
  • Place the pot on the stovetop and boil on high heat for 6-8 minutes, until the carrots are fork-tender. Then drain the water from the pot. Turn the heat down to low, and place the pot with the carrots back on the stovetop.
  • Add the butter and honey carrots. Stir together until the butter and honey have fully melted and evenly glaze the carrots.
  • Season with salt and pepper. Sprinkle with fresh parsley to serve.
