Why We Love Greek Lemon Chicken Drumsticks

In our household, we love chicken drumsticks or “giant wings” (as one of my family members calls them). Bone-in chicken is very tender and difficult to mess up. Suppose you cook them a little too long–ABSOLUTELY no worries. Your chicken drumsticks will still be juicy and delicious! (This is much different from chicken breasts).

And the best part: you can always track down a great deal on bone-in chicken! While drumsticks might not be on sale at your favorite store this week, you can expect to regularly find chicken drumsticks on markdown (about once every 4-6 weeks in most grocery stores). Check out your local grocery stores to find a good deal. If you find a deal ahead of time, you can always store drumsticks in your freezer until you want to cook them up.

Greek lemon chicken drumsticks are lemony and perfectly seasoned–and pair with just about any side dish you throw at it. Healthy & clean, this simple baked chicken will revive you when you need a bit of weeknight pick me up.

This chicken drumstick recipe is one of my favorite rotation meals. Rotation meals are meals that can be eaten regularly without much thought– and without getting boring. Kinda like a capsule wardrobe–but recipes! 🙂

Greek lemon chicken drumsticks are flavorful but don’t get tiring. My favorite weeknight meal combos.

Here’s how to make Greek lemon chicken drumsticks in the oven:

  • Preheat your oven to 375 degrees Fahrenheit and line a sheet pan with parchment paper.
  • Mix all of the Greek lemon seasoning ingredients, lemon juice, & olive oil in a small bowl.
  • Add the chicken to a very large bowl and pour the Greek lemon mixture all over the chicken. Toss the chicken with your hands or tongs until the chicken is even coated.
  • Add the chicken to the lined parchment sheet. Place one quartered lemon around the chicken drumsticks on the sheet pan.
  • Bake the chicken and lemon for 35-40 minutes in the middle rack of your oven. When the chicken temps to 165 degrees, remove the chicken from the oven. Squeeze the roasted lemon quarters over the tops of the chicken drumsticks.
  • Enjoy your Greek lemon chicken drumsticks!

What to do With Leftover Chicken

This recipe makes 12 Greek lemon chicken drumsticks. If you live in a smaller household size, still make the full recipe and use the rest of your chicken for meal prep! 🙂

How To Find Good Sales on Chicken Drumsticks

The great thing about chicken is that it goes on sale frequently. Like very frequently. Bone-in chicken pieces are already typically pretty inexpensive cuts of meat to purchase, BUT you can also find them on sale very frequently. I suggest stocking up (responsibly) when you find a sale.

Typically, grocery stores will swap the sale on different cuts of meat week-to-week. However, I find that most months chicken drumsticks will go on the sale cycle at least once.

This is typically why I create a meal plan for the whole month. This way, I can pick up sale-priced meats that I KNOW that I will use in that month.

Avoiding Household Food Waste With Sales

If you are buying chicken on sale in advance of when you are going to use it, always make sure to come up with a plan for when you will use it and or FREEZE it.

While I don’t like to buy things just because they are on sale ( I find that it can lead to an increase in my household food waste), focusing on purchasing your higher priced items (ie proteins) on sale will help you save BIG. Just make sure that when you buy something on sale for later use you add it to your meal plan– this will help to reduce the chances of it going bad before you get to use it! What is great about chicken (and many proteins) is that it can be frozen.

  • 1/3 cup fresh lemon juice juice of 2 lemons
  • 1 tbsp lemon zest zest of 1 lemon
  • 2 tbsp olive oil
  • 1 tsp honey
  • 1 tsp garlic powder
  • 2 tsp salt
  • 2 tsp oregano
  • 1/4 tsp red pepper flakes
  • 1/4 tsp smoked paprika
  • 1/4 tsp garlic powder
  • 12 chicken drumsticks
  • 1 lemon quartered optional

Instructions

  • Preheat your oven to 425 degrees Fahrenheit and line a sheet pan with parchment paper.
  • Mix the first 10 ingredients (up until the chicken drumsticks) in a small bowl.
  • Add the chicken drumsticks to a very large bowl and pour the Greek lemon mixture all over the chicken. Toss the chicken with your hands or tongs until the chicken is even coated.
  • Add the chicken to the lined parchment sheet. Place one quartered lemon around the chicken drumsticks on the sheet pan.
  • Bake the chicken and lemon for 30-40 minutes in the middle rack of your oven. When the chicken temps to 165 degrees, remove the chicken from the oven. Squeeze the roasted lemon quarters over the tops of the chicken drumsticks.
