Typically, a breakfast cookie will have protein (most recipes will use some type of nut butter) and will use healthy less-refined sweeteners like honey or pure maple syrup. How to Make Chai-Spiced Breakfast Cookies

These cookies are super easy to mix up. You can even mix them in one bowl!

Follow the steps below to whip up THE best fall breakfast cookie.

  • Preheat the oven to 350℉ and line a baking pan with parchment paper.
  • Before you mix the cookie ingredients, you will need to make the concentrated chai tea. To do this, heat 1/4 cup of unsweet almond milk in the microwave for 20 seconds. Place 2 of your favorite brand of chai tea bags into the warm milk and let it steep for 4-5 minutes. The aroma of the milk should be intense. We want to make a very strong, milky chai tea to mix into the chai cookies so that the cookies have a nice subtle (but noticeable) warm chai flavor. Remove the tea bags after the steeping is completed, and squeeze the bags to remove the excess milk.
  • Add the mashed banana, almond butter, honey, and vanilla to a large bowl. After it steeps, add in the chai-infused milk. Mix the dough. Add in the remaining ingredients and stir the cookies well. The cookie dough is a wet dough.
  • Form 1/4 cup-sized cookies and place them on a lined baking sheet. Bake for 15-18 minutes at 350℉.
  • The cookies are soft (they will have a similar texture to a soft cereal bar). Let the cookies cool on the pan for at least 10-15 minutes before you try to move them to keep the cookies from breaking.

Let the Cookies Sit on the Tray to Firm up After Baking

These cookies are soft. The texture is similar to a soft-baked cereal bar or granola bar. With that being said, they are at their most vulnerable state when they just come out of the oven. For best results, let the cookies cool before attempting to remove them from the baking sheet.

Wet Your Hands, As Needed, Between Shaping the Cookies

The cookie “dough” does not form a hard dough. This “dough” will be a bit sticky and will feel a bit “loose”–THAT’S OKAY.

Instead of rolling cookie balls, we will want to plop portions of the cookie dough on the sheet pan and shape it together to form the cookie shape. They will bake together nicely to form a soft cookie. If needed, between cookies, you can wet your hands with water to help you shape and form the cookies without too much of a “stick.” I like to also press down on the top of my cookies to flatten them a bit.

Top Your Cookies with a Few Extra White Chocolate Chips

Whenever I make cookies with chips, I like to reserve a handful of chips to place on top of the cookies right before they bake. This doesn’t improve the taste of the cookies, but it does look prettier! 🙂

    • Make sure to get the chopped walnut. Not only does this make your job easier, BUT nuts get less expensive the less “whole” that they are. Walnuts are no exception! Chopped walnuts are the least expensive type of walnuts that you can purchase.
  • Use Up Ripened Bananas
    • Don’t let your bananas go to waste! Bananas are the ultimate low-waste food because even after they start to brown, you can still use them in delicious baked goods like this one! If your bananas start to brown before you have time to use them up, you can chop them into pieces and freeze them in a freezer-safe container. For baking recipes like this one, defrost your bananas 1 day before you plan on baking.
