Chopped Peanuts: Chopped peanuts add a nice crunch to breakfast cookies. Use unsalted dry roasted peanuts.
Dark Chocolate Chips: Pick your favorite chocolate chips (we like dark chocolate chips) or chocolate chunks.
Honey: You’ll want to use honey as your natural sweetener in this recipe. The honey helps to hold together the cookies. Don’t use other sweeteners in these cookies like agave or brown sugar, since the cookies will not hold together the same way.

- Preheat the oven to 350℉ and line a baking pan with parchment paper.
- Add the mashed banana, peanut butter, honey, and vanilla to a large bowl. Add in the milk. Mix until combined. Add in the remaining ingredients and stir the cookies well. The mixture will be wet.
- Form 1/4 cup-sized cookies and place them on a lined baking sheet. Bake for 15-18 minutes at 350℉.
- The cookies are soft (they will have a similar texture to a soft cereal bar). Let the cookies cool on the pan for at least 10-15 minutes before you try to move them to keep the cookies from breaking.
