What Are Homemade Pancake Sausage”Corn” Dog Bites

These homemade pancake sausage bites are based on the highly addicting pancake and sausage dogs found in the freezer section of your grocery store. If you haven’t had them before, they are basically breakfast corn dogs.

Except that the corn dog batter is replaced with pancake batter, and the hot dog in the corn dog is replaced with maple sausage. YUM!

To make this recipe simpler, pick up your favorite pancake batter and a package of maple-flavored sausage. You can, of course, whip up your favorite homemade pancake batter, but to make this recipe easier and to involve fewer ingredients just grab a box mix.

How to Make Homemade Pancake Sausage “Corn” Dog Bites

With a few easy steps, you can make this easy recipe prep in no time!

  • Cook the maple sausage and let it cool. Cut into each piece into 3 pieces.
  • Grease a mini cupcake or mini muffin pan. (A mini muffin pan is worth buying to prep other snacks like brownie bites, mini muffins, etc.)
  • Mix the pancake mix with water and maple syrup. Make sure that the mix is pourable- but not too thin. It should look similar to cake batter. If the batter is too thick and resembles a muffin or waffle batter, add a tablespoon of water at a time to loosen it. If the batter is too thin, add a tablespoon more pancake mix.
  • Pour pancake batter into each cavity of the mini muffin tray until a little over halfway full and push a cut sausage link into the center of the batter.
  • Bake at 350 for about 15 minutes. As the pancake bites are baking, mix melted butter and maple syrup to create maple butter. After they are done baking take the hot pancake bites out of the oven and brush with maple butter.
  • Just like regular pancakes, these pancake bites are best enjoyed warm.

Storing Instructions

Let your pancakes completely cool before storing the homemade pancake sausage bites. Add cooled pancake bites to a sealed bag or container and the fridge for 1 week or freezer for up to 3 months.

To make this recipe even less expensive, try shopping at your local grocery discount store.

Grocery discount stores are a wonderful way to find pantry staples for dirt cheap. Grocery overstock or discount stores help to lessen the industry’s food waste (YAY!) and are a great place to find basics for cheap!

Almost every time I visit one, I will be able to find common staples like pancake mix and pancake syrup at serious discounts. I often will stock up on boxes of 50-cent pancake mix and $0.99 maple syrup bottles. Since grocery discount stores don’t typically have set stock, it is difficult to anticipate what you will find. But at my favorite local grocery discount shop, Sharp Shopper, I can typically find pancake mix, syrup, and sausage links for seriously reduced prices. These low-cost pantry and freezer staples seem to be pretty consistently easy to find at most grocery discount stores.

How to Reheat Homemade Pancake “Corn” Dog Bites

Refrigerated:

Reheat 4 pancake sausage bites on a microwave-safe dish for 30 seconds in the microwave.

Frozen:

Reheat 4 pancake sausage bites on a microwave-safe dish for 45-60 seconds in the microwave.

The Ingredients

  • Pancake Mix
    • Be easy on yourself! Pick up your favorite pancake mix.

      I typically go for the store-brand pancake mix, but you can use whichever mix you have on hand. For additional flavor try out flavored pancake mixes like chocolate chip, blueberry, or cinnamon. This recipe calls for 2 cups and 2 tbsp of water, but depending on your pancake mix you may need to add more water.

      You want the pancake batter to resemble cupcake batter. In other words, it should be pourable, not scoopable like muffin batter.
  • Maple Sausage
    • Maple sausage links pair the best with this recipe, as we are already adding in syrup, AND this is a breakfast recipe. You can use other kinds of sausage or breakfast sausage (like apple chicken), but personally, my family prefers the maple links. For this recipe, you will need 14 small links that will be cut into 3 pieces each.
  • Maple Syrup
    • Add maple syrup to the pancake mix. I typically cook and bake with pure maple syrup, but for this homemade pancake sausage recipe, the artificial stuff packs the right amount of maple flavor. However, if you prefer going natural, feel free to swap it out!
