Foolproof Frittata is my ultimate save-a-trip-to-the-grocery-store meal. We love frittata in our household, and if you have read other recipes of mine, you know that we have a standby breakfast for dinner night every week.

Now that eggs are back to a normal price compared to the $ 5-a-carton madness of 2023, I thought I would share my formula for a veggie-packed frittata that helps you use up the vegetables hanging around your fridge.

A frittata is crustless, which traditionally makes it a lower-carb alternative to the quiche. Frittata is fast and simple to make, which makes it my favorite baked egg dish.

What To Do with Leftover Vegetables

On a typical Thursday night in our house, I take a look in the crisper of my fridge and find all the lonely vegetables that I forgot about, and I plan what I can do with them instead. Sometimes the veggies can fit into another meal, and sometimes they are a little squashed or sad, but typically there is something that they can be used for. Even the veggies that are a little sad-looking, but still okay to eat, can be given new life in this frittata recipe.

Have some leftover vegetables or potatoes? Throw them in a gorgeous frittata. To follow my foolproof frittata formula, I used some leftover vegetables for a veggie tray and two lonely forgotten bell peppers, but any 2 cups of veggies will do the trick. Here are some of my favorite vegetables and potatoes to use:

  • Bell Peppers
  • Zucchini (chopped or shredded will work)
  • Brocolli
  • Cauliflower
  • Frozen Hashbrowns (shreds or cubes)
  • White or yellow potato
  • Spinach

How To Save a Trip to the Grocery Store with Your Meal Choices

One of the best grocery-saving and reducing food waste tips I have is to delay going to the grocery store. To be good stewards of our food we have to strive to use up what we already have. It can be hard to do, and I am by no means perfect, but delaying a grocery trip by even a day and using up produce that is likely to be forgotten about will end up saving you money.

When you need to stretch your grocery budget, try meal planning a use-it-up meal or 2 every week where you seek to use ingredients you already have on hand. You can eat leftovers or put something creative together that will help you use up what you already have before it goes bad.

The Foolproof Frittata Formula

Netflix came out with a choose-your-own-adventure rom-com last year, which I LOVED and reminded me of all the choose-your-own-adventure books I devoured as a kid. But now, it’s time to have a little fun in the kitchen and make a choose-your-own-adventure frittata. Here is the recipe that I use to mix and match whatever I have on hand.

1/2 cup milk of choice

I have used almost every kind of milk in this recipe. Regular 2% milk, skim, unflavored soy milk, and even unsweet almond milk. Anything will work, and you won’t taste much of a difference. Just avoid using sweetened or flavored non-dairy milk.

2 cups steamed or cooked veggies

I lightly steam chopped veggies in a covered microwave-safe bowl with 3 tbsp of water for about 4 to 5 minutes. If you are using potatoes steam until fork tender. Drain the bowl and add the veggies.

4 strips of bacon, 1/4 cup of ground sausage, or 2-3 cut-up sausage links

In the frittata pictured on the blog, I used 4 strips of diced turkey bacon. But you can use whatever type of meat you have on hand or just leave it out.

1/2 Cup of shredded or Crumbled cheese

I tend to always have sharp cheddar in my fridge drawer but use whatever cheese you have on hand. Feta, swiss, mozzarella, gouda, Colby jack, pepper jack, etc have all worked well for me before.

Season with salt and pepper

I like to mix the salt in pepper into the egg mixture.

What to Serve With Frittata

I like to keep my frittata servings simple. I love to eat my frittata with a drizzle of hot sauce over the top, but as far as sides go here is what I would suggest:

Slice up some fresh fruit

When I make frittata I am usually in a rush, since this is one of my go-to speedy dinners. I typically pair this dish with whatever fruit we have on hand like sliced apples, grapefruit, mandarin oranges, or pears. Healthy Homemade Maple Applesauce is always a great easy side too.

Try a side salad

Ingredients

  • 2 cup vegetables steamed or cooked
  • 1/2 cup diced onion steamed
  • 4 slices bacon or 3 chopped sausage links or 1/4 cup ground sausage
  • 8 eggs
  • 1/2 cup milk of choice do not use sweetened/flavored plant-based milk
  • 1/2 tsp salt
  • 1/4 tsp pepper use up to 1/2 tsp if desired
  • 1/2 cup shredded cheese

Instructions

  • Preheat oven to 375℉ and grease a 9×9 pie dish.
  • Start with cooled steamed veggies and chopped onion. If the veggies and onions have not been steamed, then add both the veggies and the onions to a covered microwave-safe bowl with 3 tbsps of water. Microwave the veggies for around 4 minutes (longer for raw potatoes). Drain water and dump cooled veggies into the pie dish.
  • Add chopped meat, if desired, on top of veggies. Spread the veggies and meat to evenly coat the bottom of the pie dish.
  • In a large bowl, whisk 8 eggs, milk, and salt and pepper. When the mixture is combined pour the mixture over the veggies and meats.
  • Sprinkle cheese over the top of the pie dish.
  • Place the frittata in the center of the oven and bake for 25 minutes or until the center is set.
  • Enjoy. Drizzle with hot sauce if desired. 🙂
