Iced Lemon Poppy Seed Baked Oatmeal: this might be the best baked oatmeal I have ever had. Lemon poppy seed muffin-inspired baked oats topped with a lemon Greek yogurt glaze and more fresh lemon zest. Pure sunshine. If you love lemon, then this is the breakfast for you!

You can take it from me–I devoured our whole pan of this baked oatmeal. But, can you blame me? It’s like eating SUNSHINE and summer feels for breakfast. You’ve got to try it!

How To Make Iced Lemon Poppy Seed Baked Oatmeal

This lemon baked oatmeal is a very simple recipe to make. Low effort. Big Taste. That’s my kind of recipe. It’s a great one to make with kids, because even if you make a mistake–it’s incredibly resilient.

  • Preheat the oven to 350℉ degrees. Spray a 9×9 baking dish with baking spray.
  • Mix the dry ingredients (rolled oats, baking powder, poppy seeds and salt) in a large bowl.
  • Add wet ingredients (sugars, eggs, lemon zest+juice, milk, and oil) to a small bowl and stir until just combined.
  • Add the wet to the dry ingredients and stir together.
  • Dump the lemon baked oatmeal mixture into a greased 9×9 baking dish.
  • Pour the mixture into a greased 9×9 and bake for 30-35 mins.
  • While the baked oatmeal is baking, create the lemon yogurt topping. Place all of the icing ingredients in a bowl and mix together. Place in fridge until it’s needed.
  • When the baked oatmeal is done baking, remove it from the oven and set it aside to cool. When it reaches room temperature, spread the Greek yogurt topping on top of the baked oatmeal and sprinkle with additional lemon zest, if desired.

The Ingredients

Ready to make the BEST baked oatmeal?! Great news, you probably have most, if not all, of these ingredients already! Baked oatmeal typically relies heavily on pantry staples. Check out the ingredients that you’ll need below as well as my suggested substitutions.

  • Oats
    • Old-fashioned or rolled oats are the type of oats that you use in any of my baked oatmeal recipes. Quick cook oats will work, but the texture will be a bit off.
  • Milk
    • You can use any milk that you prefer in this recipe. I typically use unsweetened almond milk in my baked oatmeal, but any milk you have on hand will work.
  • Lemons
    • Use FRESH lemons for this recipe. You will need 2 lemons (one for the zest and juice and one just for the zest). It makes a HUGE difference in the overall flavor and prominence of the lemon flavor when you use fresh lemon zest. I would not suggest using bottled lemon juice as a substitute.
  • Sugar
    • Typically my amish style baked oatmeal has a higher quantity of brown sugar than white sugar. Brown sugar provides a more molasses-like flavor. In this baked oatmeal, I want the lemon to pop! So you will notice a higher ratio of white sugar to brown sugar instead. This provides a cleaner “base” to really allow the lemon to be the star!
  • Poppy Seeds
    • I will be honest the poppy seeds are mostly in this baked oatmeal for aesthetics and a bit of added texture. However, they do add a slightly nutty flavor to the baked oatmeal. If you don’t have poppy seeds on hand, you can always leave them out.
  • Plain Greek Yogurt
    • Tangy Greek yogurt is the PERFECT topping choice for lemon-baked oatmeal. This recipe calls for plain Greek yogurt and adds additional powdered sugar into it to sweeten the topping. If you are using already sweetened yogurt, then make sure to leave out the excess sugar. You can choose to omit the topping if desired. The lemon poppy seed baked oatmeal is outstanding on its own– but we definitely prefer adding the topping. However, if you are looking to make this baked oatmeal dairy-free, omit the topping.

What is Amish-style Baked Oatmeal?

Amish-style baked oatmeal is more dense, cake-like, and cozier than other types of baked oatmeal.

Amish-style baked oatmeal is one of the MOST comforting breakfast dishes known to man. And it makes my little Pennsylvanian Dutch heart warm every time I eat it… which in our house is weekly. If you have never tried Amish-style baked oatmeal, you are missing out.

It’s one of the best breakfast “casserole” recipes and it’s SO easy and inexpensive to make.

How to Serve Iced Lemon Poppy Seed Baked Oatmeal

You can eat iced lemon poppy seed baked oatmeal hot or cold, but we like ours hot. Or better yet– hot baked oatmeal with the cool icing on the top. YUM.

While this oatmeal is DELICIOUS all by itself, you can also serve it with some fresh fruit. Raspberries and strawberries pair so well with lemon and are my go-to’s. For more protein, pair your baked oatmeal with a hard-boiled egg (on the side of course).

I typically meal prep baked oatmeal ahead of time, and then heat up individual slices in the microwave as needed. You will want to heat each slice up for 30-45 seconds.

Storing Instructions

Baked oatmeal lasts the longest when it is refrigerated. Without the yogurt topping, you can leave this baked oatmeal base out on the counter without refrigerating it. With the topping, you will want to store your lemon poppy seed baked oatmeal covered in the refrigerator for up to 3-4 days.

  • 1/4 cup Powdered Sugar
