How to Make the Best Oven-Baked Eggs in Peppers

Prep the Peppers

We always want to start this recipe, by preparing the peppers first. Nobody wants a crunchy, unseasoned pepper on the base. To prep the peppers, start by slicing your peppers in half and scooping out additional seeds/ ribs. Then, set the peppers in a casserole dish with the open side facing upwards.

We want to bring out the flavor of the peppers before adding in the eggs, so make sure to give your peppers a healthy seasoning. Drizzle the peppers with olive oil and season with 1/4 tsp salt and pepper.

Finally, we will roast the pepper halves for 15-20 minutes at 375ā„‰.

Add the Eggs

Now that our peppers are ready, we can add the eggs into our dish.

Crack an egg into each of the individual pepper cups. Then, season with additional salt and pepper as desired. Bake the pepper + eggs for 15-20 minutes at 375ā„‰ until the egg has set (go for a lower end of the cooking range if you want to achieve runny yolks).

What Toppings Should I Add to my Oven-Baked Eggs in Peppers?

You can keep this recipe as simple as you like (as I mention below you only need 2 ingredients).

But I LOVE toppings! On everything: potatoes, soups, toasts, and even these oven-baked eggs in peppers. Use this simple base recipe and add in your favorite toppings as well.

We add toppings on base one what is leftover in our fridge at the time. Here are some of my favorite toppings to add on top of my peppers:

  • Guacamole + Pico De Gallo
  • Aldi’s Jalapeno Everything Bagel Seasoning
  • Hot Sauce and Shredded Cheddar Cheese
  • Sauteed Spinach and a Sprinkle of feta

The Ingredients

If you don’t count the cooking oil and salt and pepper, you only need 2 ingredients to make these delicious oven-baked eggs in peppers: eggs and peppers. To jazz up the flavor, add additional topping ingredients like cheese, hot sauce, and everything bagel seasoning (my favorite is the Aldi jalapeno everything bagel seasoning), or even guacamole!

What Type of Peppers Should I Choose?

You can choose any color of pepper that your family prefers or that is on sale. Typically, I like to go for the 3-pack of red, orange, or yellow peppers at Aldi. We also like green, but we enjoy the red, orange, and yellow ones a little more.

Can I Prep These Peppers Ahead of Time?

Yes, absolutely! Make these oven-baked eggs ahead of time for an easy meal prep throughout the week.

Meal Prep Instructions

Cook the peppers as normal and then let the peppers cool. Add the peppers to a sealed container and store for up to 4 days. Reheat the peppers in the microwave.

Just note: if you want the runny yolk– will likely not be able to achieve that on reheat!

I’ll be honest, even though this looks like a breakfast item, we actually typically eat it in our house for an easy-budget dinner. BUT, that being said this also a GREAT breakfast item, and a stunning brunch item.

  • 3 peppers any color
  • 6 eggs
  • 2 tsp olive oil
  • 1/4 salt
  • 1/4 pepper

Instructions

  • Preheat the oven to 375ā„‰.
