What is a Dutch Baby?

A Dutch baby is a German dish that resembles a pancake but is a bit eggier like a crepe and a bit fluffy like a popover. So a pancake/crepe/popover-like dish.

Whatever you want to compare it to– its Delicious! And absolutely easy to make! All you need is a few minutes of prep time and a blender and you are off to the races.

This Pineapple Upside Down Dutch Baby is an untraditional take on the original, but boy, is it good!

Why it works

In a traditional Dutch Baby recipe, you heat up the skillet or cast iron pan you are using to bake the pancake in the oven prior to adding the blended batter to the pan and baking it in the oven. In this recipe, we skip adding the entire pan to the oven, and instead roast our pineapples in butter and cinnamon in the skillet over the stovetop. This keeps the pan hot and adds the best part of the dish: the pineapple!

How To Make Pineapple Upside Down Dutch Baby

This blender Dutch Baby recipe is a twist on the original Dutch Baby. If you have ever wanted a breakfast version of Pineapple upside down cake because —-YUMMM– who doesn’t??? Then this is the recipe for you. Follow the instructions below for the best blender Dutch baby you have ever tried!

  • Preheat the oven to 425ā„‰.
  • Place an oven-safe 9-10 inch pan on the stovetop and add 2 tbsp of butter. Heat on medium-low to melt the butter.
  • When the butter has melted, add your pineapple slices to the pan. Sprinkle 1/4 tsp of cinnamon and drizzle honey on top of the slices. Stir the pineapple in the pan until it is all evenly coated. Continue cooking the pineapple until it is slightly translucent.
  • As the pineapple is cooking, add all of the Dutch baby ingredients to a blender. Blend the mixture until smooth (about 1 minute).
  • Using a rubber spatula spread the pineapple evenly on the bottom of the pan. Turn off the heat on the stovetop. Pour the Dutch baby mixture slowly on top of the pineapple slices.
  • Place the pan into the oven and continue baking the Dutch baby for 14-18 minutes.
  • In the meantime, if desired, add heavy whipping cream and powdered sugar to a small blender. Blend the whipping cream and sugar until it forms peaks (about 1-2 minutes). You can also use a hand mixer.
  • Remove the pineapple upside-down Dutch baby from the oven and top with a dusting of powdered sugar and cold whipped cream. Enjoy!

How To Serve Pineapple Upside Down Dutch Baby

The best thing about Pineapple Upside Down Dutch Baby is that with the roasted cinnamon pineapple on the bottom, this dish basically serves itself. We like to dust ours with a light coating of powdered sugar and a dollop of 2-minute blender whipped cream.

But you can also add on top of your Pineapple Upside Down Dutch Baby Maraschino cherries, toasted coconut, or other fresh fruit.

I typically keep this meal pretty simple, since this is a FAST recipe, we typically pull it out for a quick breakfast for a dinner meal or a quick elevated weekend breakfast. When we do eat it with sides we usually go for a quick fruit salad or sliced fruit, slices of bacon, or some easy scrambled eggs.

Blender Whipped Cream

  • 1/2 cup heavy whipping cream
  • 1/4 cup powdered sugar
