Popcorn Shrimp Po’Boys With Dill Pickle Remoulade

Are you looking for an easy way to jazz up or stretch a box of frozen popcorn shrimp? These popcorn shrimp po’boys elevate frozen popcorn shrimp and take them to a whole new level. These po’boys are made of popcorn shrimp tossed in garlic butter, drizzled with a dilly pickle remoulade sauce, topped with crunchy lettuce, and inside a buttery brioche bun.

It’s a semi-homemade quick meal sure to become a family weeknight favorite.

I have to admit this is one of my most simple recipes, but it’s also my husband’s ALL-TIME favorite meal! It’s his birthday meal request every year! Not too shabby for a 20-minute meal.

And this is a budget-minded meal. Seafood can be expensive, but this recipe helps you stretch out more servings from a single box. With a 1lb box of popcorn shrimp, you can make 6 delicious po’boys with a tasty homemade dill pickle remoulade sauce.

How To Make Popcorn Shrimp Po’Boys

Popcorn shrimp po’boys are super easy to make, especially since the recipe begins with a box of frozen popcorn shrimp from the freezer section.

1. Bake or AirFry the Shrimp According to The Box Directions

Pretty simply, you are going to want to lean on the back of the popcorn shrimp box for instructions on how to best prepare the shrimp that you bought.

Personally, I like to use Lidl’s popcorn shrimp, but I realize that, unfortunately, not everyone has a neighborhood Lidl. If you don’t have a Lidl in your area, I suggest snagging a bag at Aldi (I sometimes stock up when they have them in-store) or a box of Seapak’s popcorn shrimp is always good!

2. Prepare Garlic Butter

The garlic butter is pretty simple to make, just melt the butter in a small sauce over the stovetop and then add minced garlic. When the garlic becomes fragrant, (about 30 seconds) remove the butter and garlic from the heat.

Drizzle the garlic butter mixture over the top of the cooked popcorn shrimp and give it all a toss.

3. Mix the Dill Pickle Remoulade

Combine all the ingredients of the dill pickle remoulade in a small bowl and mix. Taste and adjust salt, if needed. This step can be completed ahead of time up to 1 day in advance (which I recommend on weeknights if you want an even quicker prep time).

4. Toast Brioche Hot Dog Buns

When all the other parts of the po’boy are, or near ready, lightly toast the brioche buns. I typically toast my brioche buns for 1-2 minute(s) in a 400 preheated air fryer.

5. Assemble the Po’boys

Load and top your po’boys with all the fixings. Add garlic butter popcorn shrimp to the brioche bun, then slather the shrimp in dill pickle remoulade, and top it off with your favorite toppings. We always add fresh, crunchy lettuce, and sometimes additional diced pickles and tomatoes on top.

6. Devour! And Plan to Re-make!

What’s in Dill Pickle Remoulade Sauce?

This dill pickle sauce is a cross between a remoulade sauce and a tarter sauce. If you LOVE dill pickles, then this is the sauce for you! It’s dilly, a little tangy, and ultimately, very pickle-y! If you have extra, it’s a great chip dip as well!

Here’s what you add to it:

  • Dill Pickles
  • Dried Dill
  • Garlic Powder
  • Plain Greek Yogurt (don’t use flavored or sweetened yogurt)
  • Mayo
  • A lil’ bit of Salt
  • Pickle Juice (very important!!!)
  • Hot Sauce (optional, but tasty)

Traditionally, a remoulade sauce has a mayo base, but I like to use a mixture of mayo and plain Greek yogurt. The yogurt makes the sauce a little more tangy, while the creaminess of the mayo balances it out. If you can only use one base (mayo or Greek yogurt) in the sauce, either one will work by itself.

Dill Pickle Remoulade Sauce

We will make this from scratch, but no worries, it’s simple. If you can mix, you can make this sauce! The dill pickle remoulade sauce is comprised of mayo, plain Greek yogurt, diced dill pickles, pickle juice, and a few seasonings.

1 lb of Popcorn Shrimp

The star of the show, and the best supermarket shortcut ingredient you’ll find. Pick up your favorite kind or brand of popcorn shrimp for this recipe.

Butter

We will enhance the frozen popcorn shrimp with a little garlic butter action! The melted butter drizzles onto the shrimp to create a decadent coating. I typically avoid salted butter in this recipe and use unsalted butter, but either one will work.

Minced Garlic

Garlic is added to the butter (see ingredient above) to enhance the flavor of the garlic butter that’s added to the shrimp.

Lettuce

Crunchy lettuce adds a fresh element to these shrimp po’boys! I like to top my popcorn shrimp po’boys off with a little bit of lettuce and sometimes, chopped tomato.

Brioche Hot Dog Buns

Pick up a pack of brioche hot dog buns at Aldi for a great, buttery po’boy roll! I highly suggest using these buns for the base of your sandwich, it’s worth the extra little bit for the soft, pillowy rolls you’ll get! The brioche is a nice touch in pointing back to the French roots of this dish.

What to Serve With Shrimp Po’Boys

I’ll be honest, I keep this meal pretty simple.

99% of the time I make this recipe, it’s on a day I know I will have not a lot of energy or brain power left to add to the preparation of the meal. And honestly, this is a great sort of main dish to keep the sides simple. Just keep it simple, if you need to give yourself permission, here it is.

Ingredients

  • 1 lb popcorn shrimp
  • 4 tbsp butter
  • 1 tsp minced garlic
  • 1/4 cup plain Greek yogurt
  • 2 tbsp mayo
  • 1 1/2 tbsp pickle juice
  • 1/4 tsp dill
  • 1/8 tsp salt
  • 1/8 tsp garlic powder
  • 2 pickle spears diced

Instructions

  • Bake or air fry (my preference) the frozen popcorn shrimp according the the package’s instructions.
  • As the popcorn shrimp is cooking, melt the 4 tbsp of butter in a small saucepan. When the butter has melted, add the minced garlic in to the melted butter and heat for 30 seconds. Remove from heat to prevent the garlic from burning.
  • When the popcorn shrimp finishes cooking, pour the garlic butter over the shrimp and toss the shrimp until they are coated.
  • Lightly toast the brioche buns. (I typically air fry my buns at 400℉ for 1-2 minutes).
  • In a small bowl, mix all of the ingredients for the dill pickle remoulade sauce together.
  • Assemble popcorn shrimp po'boys. Add garlic butter popcorn shrimp to a toasted brioche roll, then drizzle the shrimp with dill pickle remoulade sauce, and if desired, top the po'boys with shredded lettuce and diced tomatoes.
