You won’t believe how easy it is to make your new favorite summer dessert! These Strawberry Frosted Lemonade Ice Pops are simple and quick to make! You’ll need a blender and some ice pop molds (see my suggestions for alternative ice pop molds if you don’t have any on hand).

Follow these easy steps below to make the BEST summer ice pops!

  • If you have the time, set out your frozen strawberries 30 minutes before making this recipe. This will allow for a more liquidy mixture of the berries which will help you pour the strawberry ice pop layer easier.
  • In a blender, add all the ingredients for the strawberry lemon ice layer. Blend all of the ingredients until they are smooth and pourable.
  • Open your tube of cool whip and add in the zest and juice of the lemon. I mix this layer right in the tube.
  • In each of your ice pop molds fill the pops with a strawberry layer, a cream layer, and then another strawberry layer (leave a little room at the top to avoid the pops from overfilling).
  • Freeze your ice pops for 4-6 hours or until they are set.
  • When you remove the pops from their molds, run the mold under warm water for 10-30 seconds to help loosen the ice pop from the mold for a cleaner removal.

Frozen Strawberries

  • Frozen strawberries are always pretty inexpensive (especially at ALDI), so I suggest using frozen strawberries for this recipe. If fresh strawberries are on a better sale, then use those instead. You want the strawberries to be somewhat frozen for the blending in this recipe. If you are using fresh strawberries, freeze them for a bit. If you are using frozen strawberries let them sit out for a little to thaw down (you want your popsicle mixture to be pourable.

Agave Nectar or Honey

  • I like to use a natural sweetener in this recipe like agave or honey. Agave is typically a little less expensive than honey. If you have neither option, just use regular white sugar.

Fresh Lemons

  • Nothing quite tastes like summer as much as fresh lemons. Use the juice and the zest in this recipe. Fresh lemons are best because of the lemon zest, ALWAYS add in lemon zest. ALWAYS. It will add so much freshness to your ice pops!

Cool Whip Tube (I use the Light Cool Whip)

Run the Pops Under Hot Water to Remove the Ice Pops from Molds

Before removing your ice pops from the molds, run the ice pops under warm water for 10-30 seconds to help the ice pops release from the mold.

Add The Fruit Layer first

Add the fruit layer to the top portion of your ice pop molds. Since the fruit layer is easier to get out than the cream layer, make sure to put it in first in your ice pop mold.

A Little Zest Always Helps

Whenever you are adding fresh lemon juice to a recipe, you might as well add in the lemon zest. Lemon zest pushes the lemon flavor more in ice pops!

Use What You Have

I will be honest, I love my ice pop molds. BUT, there are plenty of ways that you can still make tasty frozen treats without ice pop molds. Use what you have on hand. šŸ™‚

What Can I Use If I Don’t Have Ice Pop Molds?

Don’t have ice pop molds? No worries, you can still make ice pops! Not everyone has an ice pop mold at home–and that’s totally OKAY!

I personally do not like to purchase kitchen items just for a single recipe. However, if you’ll use it often enough, I highly suggest purchasing an ice pop mold! You can make so many frozen treats with very little waste. BUT….If you aren’t sure how often you will be making ice pops–try out some unconventional ice pop molds.

Here are a few ideas to use instead of ice pop molds:

  • Use ice cube trays with popsicle sticks (this will make a lot more mini pops_
  • Use 4 small 8oz cups (make sure that it is freezer-safe)
    • This pop will be too big for a popsicle stick to hold it. Instead, eat this like an Italian ice cup.
  • Use small Dixie cups with popsicle sticks
    • To make your Dixie cup ice pops last longer follow the following instructions.
    • Add Dixie cups to a loaf pan. Pour your ice pop mix into the Dixie cups. Cover each cup with tin foil before sticking a popsicle stick into the ice pops.
