Do Overnight Oats Have To Be Overnight?

Well, yes and no! You can speed up your wait time, and enjoy your overnight oats after about 2 hours. The oats need to set up in the fridge first to soften the oats.

Overnight oats are best when the rolled oats have had time to sit and absorb the milk and Greek yogurt. Otherwise, the oats would be crunchy and stiff. BUT….This doesn’t necessarily mean you must wait “overnight” to enjoy them. It takes the oats about 2 hrs to get to a point where they have absorbed enough liquid to be soft and delicious! Strawberry lemon curd overnight oats make a fantastic breakfast meal prep option since you can prep 4 servings the night before.

Overnight oats make a great breakfast. But, don’t shy away from eating them for a protein-packed snack or brinner option too.

How to Make This Strawberry Lemon Curd Overnight Oats Recipe

Prepare the Oats

In a large bowl, add all of the ingredients (oats, almond milk, Greek yogurt, chia seeds, pure maple syrup) to make a beautifully creamy overnight oats base. Add a bit of lemon zest to add some ZING to the oats. The zest is completely optional, but if you love lemon, add a little to the oats for a boost of flavor.

Make or Buy Lemon Curd

I love to make homemade lemon curd, as it is super inexpensive and relatively easy, but you can use store-bought lemon curd as well! The store-bought lemon curd will reduce your prep time significantly. Add 1 Tbsp of lemon curd to the top of each of serving of the overnight oats.

Top The Overnight Oats with berries

Place sliced strawberries on the top of your overnight oats containers. For the summer, I adore the strawberry lemonade flavor that this breakfast meal prep recipe creates, but you can test out other berries in this recipe as well. Blueberries, blackberries, and raspberries compliment this lemon curd overnight oats so well.

Let the Overnight Oats Set up In the Fridge

The oats need to soften for at least 2 hours in the fridge to soak up the liquid in the oatmeal’s base. After the oats soften up, you can enjoy the tangy, sweet, creamy oat divine-ness for up to 4 days. 🙂

3 Breakfast Meal Prep Tips for Beginners

Breakfast meal prep might be the most helpful type of meal prep out there. I don’t know about you but I don’t often feel like cooking early in the morning or before I head off to work. If you have never tried meal prepping your breakfast before, believe me, it’s a game-changer. And it’s an unbelievably AMAZING feeling to have a healthy, nutritious meal that’s waiting for you when you get up. I love not having to think about what I should eat at 6 am.

1. Be Realistic About Your Time and Give Yourself Grace

While this recipe is super fast (less than 10 minutes to prep!), I do like to acknowledge that there are some seasons of life where it might be much more difficult to prepare ahead. Know the season of life you are in and give yourself grace.

You may have some time to prep ahead to make your life easier for the next day, but you could be in a season like just having a baby, where you might need to give yourself some grace and wait to try meal prepping. Don’t worry, these tips will still be here when you are in a good season to test out full-out meal prepping. But maybe, for now, you can try to meal prep a few times each month.

If you do have a busier schedule pick out meals like this strawberry lemon curd overnight oats recipe that can be easily doubled, and prepped in under 10 minutes.

2. Plan Ahead: Set a Day and Time When You Can Block Out Time To Meal Prep

In my experience, meal prep really only works well in your schedule if you plan for it to fit in. As I am making a grocery list or meal planning, I like to look ahead at my next week or 2. From there, I will block out about 1-2 hours that I can spend meal prepping breakfast. For me after church on Sundays and Wednesday nights often work well for meal prep.

3. Know What Your Breakfast Goals Are

Define your personal goals and find recipes that fit within them. Your goals could be centered around many of your own personal “whys” like eating healthier and avoiding convenience items or the drive-through. Or to manage your weight, to make your mornings a bit less stressful, or even to save money at the grocery store.

Whatever your goals are, know them and plan and prep recipes that support those goals.
