Rolled Oats

Rolled oats (or old-fashioned oats) are an ABSOLUTE must in baked oatmeal. Don’t use quick-cook oats in your recipe. It won’t bake the same. Rolled oats give the strawberry cheesecake baked oatmeal the right texture. Not only are rolled oats good to use in this recipe, BUT they are also very versatile in other baking projects.
With your leftover oats make the best chocolate peanut butter no-bake cookies you’ll ever have! Trust me, everyone who tries them can’t get enough!

Strawberries

This recipe is a wonderful baked oatmeal brunch recipe for strawberry season! But, even if strawberries aren’t in season, you can use sliced frozen strawberries. I suggest incorporating the strawberries into the recipe while they are frozen, to avoid “bleeding”. This won’t affect the taste, but it will look a little nicer.

Mini Dark Chocolate Chips

Dark chocolate loves berries! I typically use mini dark chocolate chips because:

1 (and more importantly): They are CUTE!

2: They work REALLY well in traditional cheesecake.

Feel free to add any size or type of chocolate chip (or chunk) that you prefer to this recipe. Or omit the chocolate chips completely, if you are one of those people that doesn’t like chocolate.

Neufchatel Cheese

I typically opt for Neufchatel cheese as opposed to cream cheese. The two cheeses are very similar and interchangeable in this particular recipe. Neufchatel cheese has 1/3 less fat and fewer calories than cream cheese (check out more here).

The taste and texture are nearly identical to cream cheese, so I will often swap it out for cream cheese. Neufchatel cheese is also the same price as cream cheese at ALDI.

How to Make the Best Strawberry Cheesecake Baked Oatmeal

Homemade baked oatmeal is one of the EASIEST recipes you will ever make! And it is so much cheaper to make it at home than to buy it at your local grocery store or bakery. After making this recipe, you’ll want to add baked oatmeal to your weekly breakfast rotation. 🙂

  • Preheat the oven to 350 and spray a 9×9 dish with baking spray. Set the dish aside.
  • In a large bowl, mix the dry ingredients for the baked oatmeal. In a smaller bowl, mix the wet ingredients, then add the wet ingredients to the dry ingredients.
  • Stir the wet and dry until they are just incorporated (the mixture will be very wet). Spread the baked oatmeal into the greased baking dish.
  • In another bowl, beat the cream cheese, sugar, vanilla, and milk together until it is smooth and creamy. Then gently fold in the strawberries (leave some of the strawberry slices out to add to the top) and chocolate chip until just incorporated.
  • Dollop the strawberry chocolate chip cheesecake mixture on top of the baked oatmeal. Using a knife, gently swirl the cheesecake into the baked oatmeal. Top with more strawberry slices, if desired.
  • Bake for 35-45 minutes. The baked oatmeal will be done baking when the edges of the baked oatmeal are golden brown and the center looks set. Remove the baked oatmeal from the oven when it is done baking. Let the oatmeal sit for 15 minutes before serving.
  • After the baked oatmeal has cooled for 15 minutes, enjoy!

Amish-style baked oatmeal is a casserole-like breakfast dish. It is denser and a little more “cake” like than traditional baked oatmeal. If you come out to Lancaster County in PA, and eat at any of one of the NUMEROUS Amish-owned restaurants, you will 1000% find baked oatmeal on the menu.

Just like any solid PA Dutch recipe, baked oatmeal is hearty and feels like you’re eating a warm hug.

Amish-style baked oatmeal is one of the MOST comforting breakfast dishes known to man. And it makes my little Pennsylvanian Dutch heart warm every time I eat it… which in our house is weekly. If you have never tried Amish-style baked oatmeal, you are missing out.

Can I Use Other Berries in this Recipe?

Yes, absolutely!
