Other Recipes

In testing other recipes, I have made many a zucchini lasagna that ended up soggy. GROSS. Other recipes, that took MUCH longer to create, required a TON of prep work and time to get the zucchini dried out. These long methods included grilling or prebaking the zucchini, salting the zucchini, and squeezing the zucchini all excess moisture out. While the lasagna turned out much better, it took so much time, effort, and numerous timers to achieve a somewhat more passable dish.

But, I have come up with the solution: air frying the zucchini.

The air fryer, in my opinion, is not used nearly enough for prep work in the kitchen. But it makes light work of drying out the zucchini enough for zucchini lasagna with sausage. AND the moisture of the zucchini is still maintained in the middle.

The magic trick: preheat the air fryer to 375 degrees Fahrenheit. Toss all of the zucchini slices in the air fryer for 6 minutes, tossing the zucchini once halfway through the bake. You will notice the zucchini shrink significantly in size. And that’s it!

Cut out the hassle, and be easy on yourself–just purchase a good ‘ol pantry-staple jar of marinara and your zucchini lasagna with sausage will still taste great! You have my permission.

  • Gather your sauce, air-fried zucchini, cheese mixture, and ground sausage.
  • Sauce and zucchini will be split in 3rds. The cheese mixture and ground sausage will be split in half.
  • In a 9×11 pan, add 1/3 of the sauce.
  • Then layer 1/3 of the zucchini.
  • Add 1/2 of the cheese.
  • Next, add 1/2 of the sausage.
  • Then 1/3 more of the sauce.
  • Add the 2nd 1/3 of the zucchini.
  • Next, add the rest of the cheese.
  • Add the rest of the sausage
  • Then add the rest of your sauce.
  • Add the rest of the zucchini.
  • Top with shredded mozzarella.

Ingredients

  • 4 small zucchini or 3 medium
  • 1 1/2 cups marinara sauce
  • 1 cup ricotta
  • 2 cup shredded mozzarella divided
  • 1/2 cup parmesan
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tsp oregano
  • 1/2 tsp minced garlic
  • 1/2 tsp Italian seasoning
  • 1/2 cup parmesan
  • 1 lb ground Italian sausage

Instructions

  • In a frying pan over medium heat, fry and ground your italian sausage. Drain the fat, and set aside.
  • Using a mandolin, slice the zucchini into thin noodle-like strips. Preheat the air fryer to 375ā„‰. When the air fryer is preheated, add all of the zucchini to the basket and cook for 6 minutes, turning the zucchini once halfway through. This will help remove excess water from the zucchini. Do not skip this step.
  • Add 1 cup of the shredded mozzarella (setting the remaining cup aside), the rest of the cheeses, and seasonings to a bowl and mix to create the cheese layer.
  • Preheat the oven to 350ā„‰.
  • In a 9×11 casserole dish layer the zucchini lasagna with sausage in the following steps.
  • Layer 1: 1/3 of the sauce
  • Layer 2: 1/3 of the zucchini
  • Layer 3: 1/2 of the cheese mixture
  • Layer 4: 1/2 of the sausage
  • Layer 5: 1/3 of the sauce
  • Layer 6: 1/3 of the zucchini
  • Layer 7: remaining cheese mixture
  • Layer 8: remaining sausage
  • Layer 9: remaining sauce.
  • Layer 10: remaining zucchini.
  • Layer 11: top with 1 cup of the mozzarella cheese
  • Bake at 350ā„‰ for 20 minutes.
